Since coming back home, I now have access to a whole kitchen of tools and ingredients. I rarely cook (read: never) but now that I have so many healthy options (and let’s face it, no dining halls) I can’t help but do a little cooking and experimenting.
I’m a big fan of “super foods”; foods that are nutrient packed and benefit filled. As a vegetarian at school (and a pescatarian at home) I have to spend a bit of time making sure I’m getting enough protein and such, even when I’m not in training.
Quinoa is one of my favorite super foods. It’s a complete protein, packs a number of benefits, is easy to make, and extremely versatile. I make a lot of quinoa salads, mixing in all the veggies I have and adding lemon and a hint of salt for seasoning. Quinoa can also be used in place of rice or in baking (just check out Pinterest for endless recipes).
The above burrito features a number of super foods, including quinoa. It’s a fantastic and quite filling lunch and easy to make vegan, or with chicken (if you don’t live the veg life like me). I made up the recipe, throwing together whatever looked good in the fridge. It was both delicious and Snapchat worthy.
