It really bothers me when people say they would never be vegetarian because they would be “hungry all the time.” It’s simply not true.
Vegetarianism, to me, is much like religion in that I think it’s a very personal choice, and in that I don’t believe everyone should be vegetarian. If humanity wasn’t supposed to eat meat, then we wouldn’t.
I became a vegetarian three years ago and I’m very happy with my choice — I rarely find that I’m hungry. And I’m pretty picky.
There are plenty of non-meat proteins and great vegetarian recipes. Yesterday I shared one of my favorites, and below I included another. You really can’t get simpler than this quinoa salad (I know, I’m obsessed with quinoa; it’s a problem).
It’s vegan and very filling (I couldn’t even finish it all, I wrapped the rest up for tomorrow). The best part of it is that it can be eaten warm or cold, you really can’t go wrong! So whether you live the veg life, do meatless Mondays, or just want to try something new, try out a quinoa salad!
Ingredients:
- 1/2 cup quinoa
- Lemon (to taste)
- Mushrooms
- Yellow peppers
- Tomatoes
- Kale
- Avocado
